It is only 85° here in Bakersfield, CA, but hot meals are already leaving me cold. I don't mind cooking to prepare a meal, but eating a hot meal as the thermometer climbs to 108°, which it will here soon, is thoroughly gross.
Because of food sensitivities, my family eats very little dairy products and my husband loathes mayonaise. With those limitations, does anyone have a yummy - cold - main dish they can share with me? To get the ball rolling, I'll share one of my family's favorites. It is a slight adaptation of a recipe from a cookbook called "Sunday Suppers" called Spicy Sesame Noodle Salad.
Saute, in 2 Tbs peanut oil, until thoroughly cooked and browned:
8 oz. ham, diced 8 oz. chicken breast, diced (although most of the time I only put one of these kinds of meat in the salad) Remove meat from pan. In residual heat, saute:
1 clove garlic, minced, for about 30 seconds. Add:
3 Tbs Balsamic Vinegar (sometimes we use Rice vinegar) 3 Tbs. Soy Sauce 3 tsp. granulated Sugar 1/2 tsp. red pepper flakes 1/4 tsp. black pepper.
Add another 3 Tbs Peanut Oil and 3 Tbs Dark Sesame Oil to this mixture and set aside. (I usually go a little lighter on the peanut oil, though).
Meanwhile, boil a large pot of water. Add:
1 pkg dried oriental noodles from asian food section of market (or vermicelli), broken into thirds.
When water returns to a boil, add:
1 16oz pkg. frozen stir fry vegetables. (or whatever veggies you like. California mix is nice, too)
When noodles are cooked, drain the noodle and vegetable mixture. Add to sauce mixture in pan. Add meat. Toss until combined. Can be served right away as a yummy hot oriental noodle main dish or refrigerated for a few hours (or overnight) and served cold, as a salad.
