My son just text me for these two recipes and I thought I would share them with you before I finish our next study about the 'Desert Experience". It's going to be a good one!
As a Single Father, I collected a few good recipes over the years that were fairly easy to prepare with the biggest impact. Here are two of my children's favorites.
Breakfast Pull-Apart
Scramble 1 dz. Eggs & chop. Fry 1 pkg. bacon or sausage & chop. Chop 1/2 onion or green onion. Chop or buy shredded cheese. Cut each uncooked biscuit from can into 4 pieces and butter them w/hands or bowl-stir w/butter. Pour all this mixed together into 10 x 12 glass casserole dish & bake @ 350 till biscuit pieces on top turn light brown.
Spinach Lasagna
Defrost 1 package frozen chopped spinach, drain and bowl. Add Lg. container of small curd cottage cheese, 2 eggs, 1 cup parmesan cheese and mix. Lightly butter 10 x 12 glass casserole dish. Pour just enough Ragu (your choice) home-made, or other, spaghetti sauce into bottom of buttered dish (to float uncooked lasagna noodles). Lay uncooked noodles side by side across whole dish. You will need to snap at the corners some or snap others staight across in order to make them fit. Pour 1/2 spinach mixture on top of noodles. Lightly flick around to cover all noodles and lightly flatten. Lay sliced Mozzarella cheese over spinach mixture to completely cover. Start all over with sauce, etc,. again, but turn this layer of noodles the other direction... Other half of spinach,.. and another row of Mozzarella. Butter the bottom side of a piece of foil and seal top of dish. Poke a few small holes in top with toothpick or knife tip. Bake @380-400 for 1 hr. Let cool for 10-15 minutes. (Cooling some will prevent cheeses from running out into plates.) Cut and serve.
